The first restaurant from the Swillhouse Group is now open on Bligh Street in the heart of Sydney CBD. Dan Pepperell, the chef who made his name at 10 William St, has designed a beautifully crafted menu offering slight variations to French bistro classics to match the big, bold space. The model for Hubert was “a dingy little place in post-war France that has awesome food, service and a really buzzy vibe”, says co-owner Anton Forte. The restaurant has been delectably decorated to match the era with more than a hundred vintage prints which were collected over the years from auction houses and trips to Europe plus a small stage with a baby grand paying homage to the crooning classics on the 40’s and 50’s. Lastly the team has renovated the buildings original theatre which was boarded up during the previous tenants residency, Celestial Chinese Restaurant which traded there for 26 years, with the aim of hosting industry talks and events. Perfect spot for a night-cap or to transcend into nostalgic period last century with all the trimmings.
